02 — The Build

The whole line runs six feet from where you're standing, so there is nowhere to hide a shortcut — and no reason to want one.

Grind

Chuck and short rib go through the plate at seven. Coarse, cold, packed loosely into the tray — a tight ball cooks like a meatball, and nobody came here for a meatball.

Sear

A ball of beef hits the flattop and gets flattened once. Press it twice and you've squeezed dinner onto the steel. The edges lace into crust; the cheese goes on at thirty seconds.

Stack

Straight off the steel into paper — six across, no holding cabinet, no heat lamp, no second life. The paper is there to catch what runs out, and something always runs out.
